Tofu Korma

Method:

    • Cut the tofu into small cubes and place in a bowl with the garam masala and cornflour. Mix until incorporated.

    • Place in an air fryer with a few sprays of oil and air fry for 10 minutes until crispy. 

    • Finely slice onion ginger and garlic. In a pan add a tablespoon of oil; fry the onion for a few minutes until softened and then add the ginger and garlic.

    • Add the spices, coconut, curry leaves, and salt, and cook on high heat for 2 minutes.

    • Add the nuts, tomatoes and coconut yoghurt and simmer gently for a few minutes.

    • Place the sauce in a blender and blitz until a smooth consistency.

    • Pour the sauce back into a pan, mix in the tofu and heat thoroughly.

    • Garnish with toasted flaked almonds, desiccated coconut, coriander and chilli – Enjoy with rice, naan, or both!
