Roast Cauliflower with Cr*me Fraiche and Tahini Dressing

Method:

  • Preheat the oven to 200 degrees and line an oven tray with baking paper.

  • Slice the cauliflower lengthways into one inch thick slices and place onto a baking tray. Also add any loose florets that have fallen off to the tray.

  • Mix together paprika, cumin, garlic power, salt and pepper in a small bowl.

  • Drizzle olive oil over all sides of the cauliflower, then evenly sprinkle the spice mix over the cauliflower until evenly coated.

  • Place the cauliflower in the oven to cook for 15-20 minutes until golden brown.

  • While the cauliflower if cooking, combine all the dressing ingredients into a small mixing bowl and mix until smooth, Add a little water until you reach a drizzling consistency. Set aside.

  • Remove cauliflower from the oven and transfer to a serving platter. Then garnish with fresh pomegranate, almonds, coriander and a decent drizzle of the dressing. Make sure to save some dressing for dipping!
