Roast Brussel Sprouts with Lemon & Yogurt

Method:

  • If the brussel sprouts need to be roasted, put them in the oven while the lemon yogurt is being made.

  • To make the lemon yogurt, whisk all ingredients in a mixing bowl until smooth.

  •  Spread the yogurt evenly on a serving dish and store in the fridge until ready to serve.

  • When serving, top the yogurt with the brussel sprouts, then add the chopped almonds, pomegranate seeds and herbs.
